1/3 cup butter 1 cup white sugar 2 eggs 2/3 cup all-purpose flour 3 tablespoons unsweetened cocoa powder 1 teaspoon vanilla extract 1/3 teaspoon salt
3 tablespoons strong coffee finely grated zest of 1 small orange 3 tablespoons dark rum
Directions
Preheat oven to 392 degrees F / 200 degrees C (do not use fan-assist!).
Melt the butter in a large saucepan, then remove from heat.
Whisk sugar and eggs (use an electric mixer) in a bowl for a few min.
Combine flour, cacao powder, vanilla extract and salt in another bowl.
Stir into the whisked eggs together with the melted butter and mix well.
Stir down the coffee. Stir down the orange zest. Stir down the rum.
Lubricate a baking dish with butter and sprincle it with crumbs (use a baking dish with a size about 8½ inches and preferably with a removable bottom). Lubricate the baking dish by putting a tablespoon of butter in it and smear with a kitchen towel so both bottom and sides gets covered.
Sprincle with crumbs by adding 1/4 cup of crumbs and then gently shake the baking dish so the crumbs sticks to both bottom and sides.
Spread batter into prepared baking dish.
Bake in preheated oven for 17 to 18 minutes (do not overcook!).
